I.O. Shen knives have a unique design. The hardest steel holds the sharpest edge, but the harder the steel, the more prone to brittleness it is. I.O. Shen managed to find a way around this; using two pieces of softer steel, they sandwiched the hard steel between them, thus allowing the knife to have the ultimate cutting edge while protecting the brittle metal from shattering.

To keep your I.O. Shen knives sharp, you can use a whetstone, or the Professional Knife Wizard Electric sharpener for a professional finish.
We recommend that I.O. Shen knives are washed by hand, dried and stored instantly.
