Kitchen Knives
I.O. Shen knives have a unique design. The hardest steel holds the sharpest edge. But the harder the steel, the more prone to brittleness it is. The hardest steel is almost impossible to reproduce commercially without using the Damascus method, (folding the steel many times, similar to a Samurai Katana,) which is an expensive process. I.O. Shen managed to find a way around this; using two pieces of softer steel, they sandwiched the hard steel between them, thus allowing the knife to have the ultimate cutting edge while protecting the brittle metal from shattering. I.O. Shen call this ‘Triplex Steel Technology.’
I.O.
